  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk buttermilk, egg, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry and stir until just combined — a few lumps are fine.
  4. Let the batter rest for 5 minutes.
  5. Heat a non-stick pan over medium heat and lightly grease with butter.
  6. Pour about ¼ cup of batter per pancake. Cook until bubbles form on the surface and the edges look set, about 2 minutes.
  7. Flip and cook for another 1–2 minutes until golden. Serve immediately.
